Scottish Empire Biscuits

We had a go at making Scottish Empire Biscuits this week in Baking Club.
We achieved a lovely biscuit base then rolled the mixture and used cutter to create the perfect biscuits shapes.
After baking in the oven for 10 minutes, they came out light and fluffy. We cooled them and then put a layer of raspberry jam between 2 biscuits and then decorated the top with a little layer of icing and a cherry.
We tested them with a cup of tea and all agreed they were amazing.
